The philosophy of Oyster Bay is to produce fine, distinctly regional wines that are elegant and assertive with glorious fruit flavours. An affordable, everyday luxury and their sparkling range is no exception.

As self-confessed bogans we have an attraction to black. The key to creating a silky death metal monster like Blacktop is the caramelised Golden naked Oats we've built it around. Sophisticates will detect the chocolate and coffee notes of creamy tiramisu. The rest of us will note that it matches our jeans.

This pickup is loaded with notes of papaya, nectarines, citrus and melon, with some bitterness in the backend for a full and balanced ride.

Pilsner is famously Czech in origin, but here we've gone for a South Pacific hop profile in keeping with the people who brew it and drink it. Passionfruit, grapefruit and sauvignon blanc characters abound, stacked up on a robust malt base that's partly German, partly Kiwi.

XPA means Extra Pale, a product of Quickchange's lighter malt base. That delicate colour though is undercut by a glorious hit of alpha oils from Mosaic, Galaxy and Citra hops. Sometimes you don't want your mouth flayed raw and your liver worked to a standstill. Sometimes a few luscious notes of mango, guava, lychee and pineapple can be just the thing.

This is an all-American show with Centennial, Citra and Simcoe overwhelming your nose, kicking you in the taste buds and departing with more bitterness than a Palm Springs divorce. Our feathered friends see the world differently. Through birds' eyes, things might look almost psychedelic to us, with heightened colours and fresh hues forming a surprising new spectrum. This hazy, citrus and stonefruit accented IPA with a mellow, soft and silky texture gives a similarly refreshing change of perspective.

The troublesome original release, named for the problematic first brew day which hugely emphasised its hop bitterness. It's matured and evolved nicely over the years. Big tropical hop flavour from local varieties with strong bitterness from an English hop to honour its origins, all balanced by plenty of malt.

The raptor family includes a surprisingly diverse collection of birds of prey and their kin, and stretches to include some of their fiercer ancestors from the land before time. Pale Ale can feel like a similarly broad category, but this one is very much of the more assertive kind. They say its wings bring thunder and its eyes flash lightning, but the thunderbird's intensity is benevolent, its appearance a good omen. This bright IPA borrows its name to give a fresh retelling to a familiar story by keeping things lean, lucid and enlivening. Its dazzling tropical character comes thanks to a hop from North America, where these tales were first told.

Bright and lively like a parrot, but small and ubiquitous like a sparrow, the Yellowhammer adds a flash of colour and a musical chirp to open spaces all over the country. The way it does a lot with just a little inspires this smooth and refreshing hazy pale ale, streaked with the striking tropical notes of Strata hops.

Since its inception, Penfolds Koonunga Hill has always aimed to deliver quality, value and consistency. The original 1976 Koonunga Hill Claret is a legendary wine that is still drinking well today. Koonunga Hill Shiraz joined the range in 2002, a contemporary reflection of Penfolds multi-regional sourcing philosophy. Shiraz from the warmer districts of South Australia is carefully blended, with the Barossa Valley always well represented. Ripe plum, blueberry & sweet spice - undeniably South Australian Shiraz. The palate shows flint, liquorice, smoked meat & paprika. Integrated tannins remind us of the wine's place in the Penfolds family.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

A tribute to the Barossa's winemaking heritage, Pepperjack is crafted using a blend of traditional techniques and modern flair. Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. The palate is plush and layered, delivering concentrated dark fruits, fine tannins, and a soft, lingering finish. Pepperjack Shiraz is a true Barossa classic.
